Our Select Spanish oil is from Catalonia in the north east of the country and is made from the tiny Arbequina olive, picked by hand whilst still slightly green and pressed the same day to give a very low acidity and to capture a sweet grassy aroma, a lovely greenish-gold colour and a rich fruity flavour. It is most suitable for dressing salad leaves (superb with our 5 year old vinegar) and for drizzling over fish, vegetables and other delicate foods.

Here is a sample recipe for Spanish Olive Oil:
Rocket and Fig Salad
Serves 4
225g rocket leaves
125g fresh figs, quartered
3 tablespoons extra virgin olive oil
1 tablespoon fresh lemon juice
Sea salt and freshly ground black pepper
Combine the oil, lemon juice, salt and pepper in an old, clean olive or jam jar. Screw shut and shake.
Pour the dressing over the rocket leaves and figs and toss thoroughly.
