5 Year Old Balsamic Vinegar

Our 5 year old Balsamic Vinegar from Modena in northern Italy is expertly matured for at least five years in traditional wooden barrels. The vinegar has a marvellously deep flavour and a good balance between the sweet and sour. It was awarded the Gold Medal at The Guild Of Fine Food Retailers, Great Taste Awards 2003. It combines fantastically well with our Select Spanish or Fine Italian oils (4 parts oil to 1 part vinegar) as a dressing, for good salad leaves such as baby leaf spinach or wild rocket. It should be used to sparingly dress either cold food: salads, tomatoes, strawberries, chilled melon or pear and vanilla ice cream or cooked food: grilled fish, steaks and chops, mushrooms, asparagus, rare roast beef and tomato based pasta sauces.

Balsamic Salad Dressing

Dress a salad for 4.

A screw top jar is indispensable (a clean old olive jar will do) for making dressings, simply put in all the ingredients, screw shut and give a good shake!

4 tablespoons quality extra virgin olive oil

1 tablespoon quality balsamic vinegar

1 teaspoon mustard powder

1 crushed clove of garlic

3 tablespoons chopped fresh basil

sea salt and freshly ground black pepper
