Single Estate Greek Olive Oil from Lesbos
A rustic but smooth oil from the enchanting island of Lesbos. Made from the koroneki olives, grown in a tiny 5 acre olive grove. The olives are hand picked then crushed using a 200 year old donkey powered stone mill.
The oil has a distinctly grassy aroma, a clear, almost phosphorescent, colour and is delightfully mild in flavour with just a little pepper on the finish. Superb with Greek salads, salad leaves, pasta, grilled fish and vegetables.

Feta Salad
The superb Greek favourite as served in all the best Tavernas.
Recipe Serves 4
Ingredients:
200g feta cheese
4 vine-ripened tomatoes
1 cucumber
1 red onion
1 firm yellow pepper
1 clove of garlic
5 tablespoons 'gift of oil' extra virgin olive oil
24 large black olives e.g. Calamatta
1 pinch oregano
Salt and freshly ground black pepper
Prepare by washing the tomatoes and cucumber and cutting into thin slices. Peel the onion and slice into thin rings. Seed the pepper and cut into thin strips.
Drain the cheese, pat dry with kitchen towel and dice into 2cm cubes.
Peel the clove of garlic and cut into two. Use the cut ends of the clove to rub inside a large salad bowl and then dispose of the garlic.
Place the vegetables and feta cheese in the bowl and add the olives.
Dress the salad with the extra virgin olive oil, oregano, a little salt and plenty of freshly ground black pepper and mix thoroughly before serving without delay.
