Balsamic Vinegar and Sun-Dried Tomatoes with Pasta

Serves 4

500g dried pasta (penne or rigatoni - the best you can get)
8 sun – dried tomatoes in oil, chopped
1 red onion, finely chopped
2 tablespoons balsamic vinegar
4 tablespoons extra virgin olive oil
1 tablespoon chopped fresh basil
Salt and freshly ground black pepper

Heat 3 tablespoons of the olive oil in a pan.

Add the onion and cook until softened.

Add the tomatoes, freshly ground black pepper and basil and cook for a minute or so stirring.

Add the balsamic vinegar allowing to remain on the heat for only a few seconds before removing.

Add salt to taste.

Stir in 1 tablespoon of olive oil and dress with a few torn up fresh basil leaves.
